Quinoa in Instant Pot
Even long before it gained popularity online, I've always loved quinoa! It's the perfect alternative to rice or couscous; made up of tiny, tender grains with just a bit of chew and a deliciously toasted, earthy flavor.
The secret to quinoa is to ditch the idea that it's just a rice replacement for rice. It's really so much better than a substitute! Quinoa is perfect for a host of uses no other grain can perfect. Add it to curry to let it soak up the sauce, use it for squash boats, make up a big fire-roasted veggie bowl, or serve it with a juicy meat to capture every drop of flavor!
Plus, it's so easy to make. Once you learn how to cook quinoa, you'll be making it all the time! And with the Instant Pot, it's so easy. Toss the ingredients in the pot, let it pressurize, and within a minute, it's all done!

- The type of quinoa doesn't matter, all will cook perfectly this way! Just make sure it's not a rice and quinoa blend, as the two grains will not cook evenly.
- The broth can be swapped out for your favorite broth, stock, or just plain water. Choose your favorite depending on what the quinoa is for!
- The total time of this recipe is 23 minutes, but remember to only set your Instant Pot to cook for 1 minute. The rest of the time is pressurizing!
- This is the perfect base recipe to add your own flavorings too! I love adding spices to the broth like turmeric, cinnamon, and ginger.
- This recipe is perfect for meal prep! Double it to have plenty of quinoa to go around for an entire week of meals.
Quinoa in Pressure Cooker FAQ
Quinoa in the pressure cooker should be cooked on Manual / High Pressure. This will cook the quinoa very quickly, resulting in perfectly fluffy, light quinoa without the risk of it overcooking and getting mushy!
Quinoa expands to 4 times its original size when cooked, meaning that 1 cup of dry quinoa makes a whopping 4 cups of cooked quinoa! Keep this in mind when making large batches, as it can expand to be too large for smaller cooking pots.
Quinoa uses the ratio of 1:2, so 1 cup of quinoa will need to be cooked in 2 cups of water. This ratio can be applied to all liquids, so you can similarly use 2 cups of broth or stock!
When you season quinoa is up to you, and how you intend to use it! When I'm making a large batch to save for meals the entire week, I season it after cooking. If you're making enough for just one meal, however, seasoning it during cooking will work, too.
