It's not every day that I can say a comfort food is also an easy and wholesome meal! When I first moved out on my own, it was carrot ginger soup that kept me warm during winter. It's cozy, easy, and chock full of ginger!

No more fussing with the oven or waiting for vegetables to roast; with this easy carrot soup recipe, all you need to do is saute the onions, chop the vegetables, and let the pressure cooker do the work. A quick blend and it's all set!

Instant Pot Carrot Soup Ingredients
- Olive oil
- Onion
- Carrots
- Garlic
- Ginger
- Broth (of choice)
- Salt and pepper
- Tumeric (optional)
How to Make Carrot Soup
- Slice all of the vegetables, then set the Instant Pot to Saute mode and add the oil to the bowl.
- Once the oil is nice and hot, add in the onions and carrots. Cook, stirring occasionally, until the onions are translucent, about 2-3 minutes. If you choose, you can add the carrots a little earlier so they can brown for extra flavor.
- Add in the garlic and ginger, stirring frequently, and cook for one minute until aromatic.
- Turn off the saute setting, then add in the broth and seasonings.
- Put on and secure the Instant Pot lid and set it to the Soup setting, then let it cook for 15 minutes.
- Naturally release the pressure, then blend the soup into a smooth puree with either an immersion blender or by pouring into a food processor.
- Add salt and pepper to taste, and enjoy!
Ginger Carrot Soup Recipe Tips
- While you don't need to saute the carrots for extra time, it's never a bad idea to brown them for extra flavor!
- Adding turmeric will add amazing flavor to this ginger carrot soup. Just don't add too much, as it has a very strong taste. And take it from me: if you add turmeric and spill some soup, clean it immediately or else it'll stain any surface it touches!
- Just turmeric and ginger are perfect for flavor, but this soup is perfect for adding variations! For example, adding in a few tablespoons of chopped fresh coriander when it's done cooking will make a fresh and delicious Carrot and Coriander Soup.
