Carrot Ginger Soup Recipe

It's not every day that I can say a comfort food is also an easy and wholesome meal! When I first moved out on my own, it was carrot ginger soup that kept me warm during winter. It's cozy, easy, and chock full of ginger!

And now, with the ease of the Instant Pot, it's easier than ever! No more fussing with the oven or waiting for vegetables to roast; with this easy carrot soup recipe, all you need to do is saute the onions, chop the vegetables, and let the pressure cooker do the work. A quick blend and it's all set!

Looking for a quick and easy soup for the holidays? One of the reasons this is the best carrot soup recipe ever is that it's friendly for everybody. With no dairy or meat, it's a vegan carrot soup so full of flavor, you won't miss the chicken broth!

Instant Pot Carrot Soup Ingredients

  • Olive oil
  • Onion
  • Carrots
  • Garlic
  • Ginger
  • Broth (of choice)
  • Salt and pepper
  • Tumeric (optional)

How to Make Carrot Soup

  1. Slice all of the vegetables, then set the Instant Pot to Saute mode and add the oil to the bowl.

  2. Once the oil is nice and hot, add in the onions and carrots. Cook, stirring occasionally, until the onions are translucent, about 2-3 minutes. If you choose, you can add the carrots a little earlier so they can brown for extra flavor.

  3. Add in the garlic and ginger, stirring frequently, and cook for one minute until aromatic.

  4. Turn off the saute setting, then add in the broth and seasonings.

  5. Put on and secure the Instant Pot lid and set it to the Soup setting, then let it cook for 15 minutes.

  6. Naturally release the pressure, then blend the soup into a smooth puree with either an immersion blender or by pouring into a food processor.

  7. Add salt and pepper to taste, and enjoy!

Ginger Carrot Soup Recipe Tips

  • While you don't need to saute the carrots for extra time, it's never a bad idea to brown them for extra flavor!
  • Adding turmeric will add amazing flavor to this ginger carrot soup. Just don't add too much, as it has a very strong taste. And take it from me: if you add turmeric and spill some soup, clean it immediately or else it'll stain any surface it touches!
  • Just turmeric and ginger are perfect for flavor, but this soup is perfect for adding variations! For example, adding in a few tablespoons of chopped fresh coriander when it's done cooking will make a fresh and delicious Carrot and Coriander Soup. Or, add a splash of your favorite hot sauce and some red pepper flakes for Spicy Carrot Soup!
  • Other root vegetables similar in texture to carrots can be cooked the same way. A favorite of mine is adding parsnips! Just chop them and mix them in with the carrots for a lovely, rich, mild Parsnip and Carrot Soup.

Can you use the Instant Pot for carrot soup?

The Instant Pot, and other pressure cookers, are perfect for carrot soup! Pressure cookers soften hard vegetables very quickly and evenly, making for a creamy and smooth soup in less than half the time of other cooking methods.

How do you make carrot soup step by step?

Carrot soup is an incredibly simple and easy soup to make with a pressure cooker. Just chop all the vegetables, briefly saute the onions and carrots with the Instant Pot's saute setting, add in the garlic and ginger, then put all of the rest of the ingredients in and cook on the soup setting for 15 minutes. Blend it once it's cooked, and you've got an easy, delicious soup!

Do you have to cook carrots before adding them to soup?

With traditionally cooked carrot soup, the carrots need to be roasted until soft for them to blend well into a soup. However, when you make carrot soup in the Instant Pot, the carrots will perfectly soften in the broth!

How long does it take for carrots to soften in soup?

Using a pressure cooker, carrots will soften in 15 minutes. Pressure cookers and Instant Pots are perfect for hard vegetables as they soften them much more quickly than other cooking methods.

Ingredients
  

  • 1 Tablespoon Olive oil or other oil
  • 1 Onion minced
  • 3 cups Carrots chopped, approximately 6-7 carrots
  • 3 cloves Garlic sliced
  • 1 Tablespoon Ginger minced
  • 2 cups Vegetable broth or broth of choice
  • Salt and pepper to taste
  • 1 teaspoon Turmeric optional
