I was a little intrigued at the beginning, but from my very first bite... it was an irresistible burst of sweet and savory flavors. I instantly knew I needed to get my hands on the recipe!

Take it to your next family gathering and watch it disappear. It's seriously that good!

Pineapple Casserole Ingredients
- Butter
- Milk
- Sugar
- Eggs
- Crushed Pineapple
- White Bread
Unlike other pineapple casserole recipes, mine does not use cheese or crackers. Instead, I use cubed bread and a simple, sweet mixture to create a somewhat savory, sweet casserole you can enjoy as a side dish for ham, summer potlucks, and so much more. It even makes a great dessert - like a pineapple bread pudding!

How to Make Pineapple Casserole
- Preheat your oven to 350℉. In a bowl cream together butter, milk, and sugar with a hand mixer.
- Carefully crack 4 eggs into the same bowl. Add 1 can of crushed pineapple, and use a whisk to fully mix together.
- Remove the crust from 5 slices of white bread, cut them into small cubes, and add them into the same bowl. Fold bread into the batter with a spatula.
- Pour mixture into a greased 9x13" casserole dish and spread out evenly. Bake for 1 hour.
- Serve immediately and enjoy!
Pineapple Bread Pudding Tips
- Grease your casserole dish: Don't forget this step! Greasing your baking dish means easier cleanup.
- Canned pineapples: I recommend using canned pineapple for this recipe. They're so much sweeter and full of flavor! Fresh pineapple is more acidic.
- Drain the pineapple juice: Make sure to drain as much of the juice from the can of crushed pineapple as possible. This prevents excess moisture in your casserole!
- Add extra fruit: If you'd like a fruitier casserole, experiment with adding in strawberries, raspberries, or another one of your favorite fruits!
- Serve with a twist: Although pineapple casserole is often enjoyed as a side dish, you don't have to limit its potential. It's a great dessert, too! Try serving it as a pineapple bread pudding with whipped cream, a scoop of vanilla ice cream, or caramel syrup.

How to Store Bread Pudding with Pineapple
- Storing: Once fully cooled, sore pineapple casserole in the original baking dish covered with plastic wrap, or in an airtight container. Place in the refrigerator for up to 5 days.
- Freezing: If you want to keep your pineapple casserole around for longer, transfer it to a freezer-safe airtight container, and freeze for up to 2 months.
- Thawing and Reheating: Make sure to thaw the casserole in the fridge overnight. Take it out of the fridge and let it rest on the counter for an hour, then pop it in the oven for about 15-20 minutes at 350℉. Enjoy!
