There's really nothing like the iconic smells and flavors of Mexican street corn: sweet corn, fragrant chipotle peppers, tangy cheese and tons of lime zest. I have enjoyed it many times at my favorite Mexican restaurant, and the smell would stick with me all the way home and followed me right to the kitchen!
After experimenting with my own street corn recipes at home, I came up with this truly delicious corn casserole recipe! It has all the incredible flavor of elote and is easier than ever before. By combining frozen corn and simple pantry ingredients, this Mexican corn dish is easy, fragrant, and so, so delicious!

Street Corn Casserole Ingredients
- Corn (Frozen or fresh)
- Mayonnaise
- Chipotle pepper
- Salt and pepper
- Green onions
- Parmesan
- Lime
- Hot sauce (optional)

How to Make Mexican Corn Casserole
- Preheat the oven to 350°F. While it's heating, mix together the corn, mayonnaise, chipotle pepper, salt, pepper, and green onions in a bowl, until well combined.
- Grease a 9x13 baking dish with nonstick spray, then add in the corn mixture.
- Sprinkle parmesan over the dish, then bake for 20 minutes covered, and another 20 minutes uncovered. Add the green onions, lime juice, and hot sauce, then serve!

- Fresh or frozen corn both work well for this recipe! I've found that fresh corn tends to stay a little juicier, but the long cook time means that both options will turn out similar. It's a great way to use up frozen corn!
- For an extra tasty treat, try sprinkling the final dish with cotija cheese!
- While great as a side on its own, this recipe is also delicious added to tacos or stuffed in burritos.
