After experimenting with my own street corn recipes at home, I came up with this truly delicious corn casserole recipe! It has all the incredible flavor of elote and is easier than ever before. By combining frozen corn and simple pantry ingredients, this Mexican corn dish is easy, fragrant, and so, so delicious!

Street Corn Casserole Tips

  • Fresh or frozen corn both work well for this recipe! I've found that fresh corn tends to stay a little juicier, but the long cook time means that both options will turn out similar. It's a great way to use up frozen corn!
  • For an extra tasty treat, try sprinkling the final dish with cotija cheese!
  • While great as a side on its own, this recipe is also delicious added to tacos or stuffed in burritos.

Corn Casserole Recipes FAQs

What is Mexican Street Corn made of?

Mexican street corn is corn dressed with sour cream, mayonnaise, chipotle pepper, cheese, and lime juice! This unique blend of tart and zesty flavors compliments the sweetness of corn for a truly incredible flavor experience you'll be coming back for more of.

What kind of chili powder is used for elotes?

Elote classically uses chipotle pepper powder, which is a specific sort of chili powder made from chipotle peppers. It has a smokier and more earthy flavor than classic chili powder. As it holds a lot of sway in the flavor of elote casserole, it's important to use the right one.
