I have been all about pickle recipes this summer, and out of everything we've tried, from pickled red onions to pickled carrots, my family and I can't get enough of these pickled cucumbers!
They're a quick and easy treat you can pair with dinner or just munch on as a snack to beat the summer heat. And, believe it or not, quick pickled cucumbers are ready in as little as 30 minutes.
With no fancy skills or tools required, these easy refrigerator pickles are like magic in a jar. Best of all, there's no waste. Once you eat everything from the first jar, you can pickle more cucumbers in the same brine!
And trust me, that may happen more quickly than you expect. These cucumber pickles disappear!

Pickled Cucumber Recipe Ingredients
- Cucumbers
- Water
- Apple Cider Vinegar
- Sugar
- Salt

How to Pickle Cucumbers
- Carefully cut your cucumbers into thin slices. Place them inside a glass jar along with the remaining ingredients.
- Secure the lid and shake well to mix.
- Refrigerate for 30 minutes, or overnight for the best results.

- Use fresh and firm cucumbers for the best crunchy texture.
- You can cut the pickles into slices, spears, or sticks based on preference. Thicker cuts will take a bit longer to pickle, so you may want to leave spears overnight.
