Ingredients
  

  • 3 small cucumbers sliced
  • 2 cups water
  • 2 cups apple cider vinegar
  • cup sugar
  • pinch sea salt

Instructions
 

  • Carefully cut your cucumbers into thin slices. Place them inside a glass jar along with the remaining ingredients.

  • Secure the lid and shake well to mix.

  • Refrigerate for 30 minutes, or overnight for the best results.

Notes

  • Use fresh and firm cucumbers for the best crunchy texture.
  • You can cut the pickles into slices, spears, or sticks based on preference. Thicker cuts will take a bit longer to pickle, so you may want to leave spears overnight.
  • Feel free to add any spices you like, such as curry powder, mustard seeds, black pepper, or red pepper flakes.
  • You can also add in garlic cloves, fresh dill, or other fresh herbs. Play with the flavor and customize your quick pickles to your tastes!
  • Overnight is better for pickling - but these pickles are ready to enjoy in just 30 minutes.
  • Quick pickles can be used for anything you enjoy pickles with, from sandwiches to salads, or simply as a snack.
  • Although I use apple cider vinegar for my quick pickled cucumber recipe, you can also use white vinegar, rice vinegar, malt vinegar, or even white wine vinegar.
