Carefully cut your cucumbers into thin slices. Place them inside a glass jar along with the remaining ingredients.
3 small cucumbers, 2 cups water, 2 cups apple cider vinegar, ⅓ cup sugar, pinch sea salt
Secure the lid and shake well to mix.
Refrigerate for 30 minutes, or overnight for the best results.

Use fresh and firm cucumbers for the best crunchy texture.
You can cut the pickles into slices, spears, or sticks based on preference. Thicker cuts will take a bit longer to pickle, so you may want to leave spears overnight.
Feel free to add any spices you like, such as curry powder, mustard seeds, black pepper, or red pepper flakes.
You can also add in garlic cloves, fresh dill, or other fresh herbs. Play with the flavor and customize your quick pickles to your tastes!
Overnight is better for pickling - but these pickles are ready to enjoy in just 30 minutes.
Quick pickles can be used for anything you enjoy pickles with, from sandwiches to salads, or simply as a snack.
Although I use apple cider vinegar for my quick pickled cucumber recipe, you can also use white vinegar, rice vinegar, malt vinegar, or even white wine vinegar.
