  • 2 Tablespoons butter
  • 1 Tablespoon olive oil
  • 16 oz. button mushrooms
  • salt to taste
  • pepper to taste
  • 3 cloves garlic minced
  • 1 Tablespoon flat leaf parsley chopped, plus more for optional garnish
  • 1 teaspoon dried thyme

Instructions
 

  • Rinse mushrooms and gently pat dry with a paper towel to remove any excess dirt. Trim any mushroom stems that are too long so your mushrooms are even.

  • In a large pan over medium-high heat, add olive oil and butter, and allow the butter to melt.

  • Once the butter melts, add mushrooms and season with salt and pepper.

  • Cook for 5-7 minutes. Stir now and then, but not too often - you want the mushrooms to have time to brown and caramelize.
  • Reduce heat to medium. Add garlic, thyme, and parsley to the pan and cook for 1-2 minutes, until fragrant.

  • Give the pan a good stir. Add to a serving dish and pour pan drippings over top.
  • Sprinkle with remaining parsley for garnish, serve, and enjoy!

Notes

  • Be gentle when washing the mushrooms as they can be delicate, but don't avoid washing them - they're naturally a little dirty when buying them whole.
  • Make sure the mushrooms are completely dry after washing them, or they won't crisp up properly and may even become soggy.
  • You can slice the mushrooms if you prefer, or buy them sliced, but they are delicious and have more of a bite to the texture when left whole. If you want to slice them, try my Sauteed Garlic Mushrooms recipe instead.
  • Only stir the pan now and then when caramelizing the mushrooms. If you stir too often, they won't brown properly.
  • If you want to add a little something extra, sprinkle your butter garlic mushrooms with parmesan when serving. This little addition is so good!
  • A little dash of Worcestershire sauce also adds a nice flavor if you're pairing the mushrooms with a dish like steak. Give it a try!
