Rinse mushrooms and gently pat dry with a paper towel to remove any excess dirt. Trim any mushroom stems that are too long so your mushrooms are even.
In a large pan over medium-high heat, add olive oil and butter, and allow the butter to melt.
2 Tablespoons butter, 1 Tablespoon olive oil
Once the butter melts, add mushrooms and season with salt and pepper.
16 oz. button mushrooms, salt, pepper
Cook for 5-7 minutes. Stir now and then, but not too often - you want the mushrooms to have time to brown and caramelize.
Reduce heat to medium. Add garlic, thyme, and parsley to the pan and cook for 1-2 minutes, until fragrant.
3 cloves garlic, 1 Tablespoon flat leaf parsley, 1 teaspoon dried thyme
Give the pan a good stir. Add to a serving dish and pour pan drippings over top.
Sprinkle with remaining parsley for garnish, serve, and enjoy!
