Ingredients
  

  • 6 cups Corn frozen or fresh
  • 1 cup Mayonnaise
  • 2 teaspoons Chipotle pepper ground
  • Salt and pepper to taste
  • 1 bunch Green onions chopped
  • ½ cup Parmesan cheese
  • Lime wedges
  • Hot sauce optional

Instructions
 

  • Preheat the oven to 350°F. While it's heating, mix together the corn, mayonnaise, chipotle pepper, salt, pepper, and green onions in a bowl, until well combined.

  • Grease a 9x13 baking dish with nonstick spray, then add in the corn mixture.

  • Sprinkle parmesan over the dish, then bake for 20 minutes covered, and another 20 minutes uncovered. Add the green onions, lime juice, and hot sauce, then serve!

Notes

  • Fresh or frozen corn will both work well for this recipe! I've found that fresh corn tends to stay a little juicier, but the long cook time means that both options will turn out similar. It's a great way to use up frozen corn!
  • For an extra tasty treat, try sprinkling the final dish with cotija cheese!
  • While great as a side on its own, this recipe is also delicious added to tacos or stuffed in burritos.
