Preheat the oven to 350°F. While it's heating, mix together the corn, mayonnaise, chipotle pepper, salt, pepper, and green onions in a bowl, until well combined.
6 cups Corn, 1 cup Mayonnaise, 2 teaspoons Chipotle pepper, Salt and pepper, 1 bunch Green onions
Grease a 9x13 baking dish with nonstick spray, then add in the corn mixture.
Sprinkle parmesan over the dish, then bake for 20 minutes covered, and another 20 minutes uncovered. Add the green onions, lime juice, and hot sauce, then serve!
½ cup Parmesan cheese, Lime wedges, Hot sauce
Notes
Fresh or frozen corn will both work well for this recipe! I've found that fresh corn tends to stay a little juicier, but the long cook time means that both options will turn out similar. It's a great way to use up frozen corn!
For an extra tasty treat, try sprinkling the final dish with cotija cheese!
While great as a side on its own, this recipe is also delicious added to tacos or stuffed in burritos.
