  • 1 pint cherry tomatoes
  • 2 cucumbers diced
  • cup olive oil
  • 2 Tablespoons balsamic vinegar
  • 1 Tablespoon fresh parsley chopped
  • salt and pepper to taste (approximately ¼ teaspoon each)
  • 1 Tablespoon dried oregano
  • ¼ teaspoon minced garlic
  • 4 ounces feta cheese crumbled

Instructions
 

  • Cut cucumbers into thick slices, then cut those slices into fourths for thick chunks. The cherry tomatoes may be left whole or halved according to preference.

  • Add cucumbers, tomatoes, olive oil, balsamic vinegar, parsley, salt, pepper, oregano, and minced garlic to a bowl. Stir to thoroughly combine.

  • Top with crumbled feta before serving. Serve chilled, and enjoy!

Notes

  • If you prefer, you can use mozzarella or goat cheese in place of feta cheese. Both are great alternatives to feta in salad.
  • Large tomatoes can be used instead of cherry tomatoes, if you like. I recommend using heirloom tomatoes and cutting them into chunks of equal size to the cucumbers.
  • This recipe will make about 6 small servings or 4 larger portions. To feed a crowd easily, double the ingredients.
  • Other dressings may be used instead of the balsamic vinegar dressing in this recipe. Try the sweet honey balsamic vinaigrette used in my Rocket Salad with Pear.
