Feta Cheese Salad
Once winter starts to make way for spring, my favorite way to celebrate is with fresh vegetable salad recipes. There is nothing like the combination of sweet cherry tomatoes and crisp cucumbers paired with a balsamic vinegar dressing and crumbly feta cheese!
My favorite thing about this easy vegetable salad recipe is how customizable it is. You can add more to it than just cucumbers and tomatoes; I like to add thinly diced red onions and sometimes even shaved corn or chickpeas to mine. Or, swap out the dressing for another favorite balsamic vinaigrette, and it takes on all new flavors!
This is an easy salad to make for lunch, dinner, or even a potluck. I can attest I have made this salad many times to bring to my kids' football games, and for dinner parties, game day, and backyard BBQs!
Every time I have made cucumber tomato feta salad, it has been a hit. But for something so popular, it is so easy to make. Even easier if you have a vegetable chopper!

Cucumber Tomato Salad with Feta Ingredients
- Cherry tomatoes
- Cucumbers
- Olive oil
- Balsamic vinegar
- Fresh parsley
- Salt
- Pepper
- Dried oregano
- Minced garlic
- Feta cheese
I love the simple, fresh ingredients in vegetable salad. You can swap them out however you like, too. Try adding chickpeas, shaved corn, or using a different dressing or even cheese. Goat cheese is a great choice as a substitute for feta if you want a salad with even more "oomph".

How to Make Cucumber Tomato Salad
- Cut cucumbers into thick slices, then cut those slices into fourths for thick chunks. The cherry tomatoes may be left whole or halved according to preference.
- Add cucumbers, tomatoes, olive oil, balsamic vinegar, parsley, salt, pepper, oregano, and minced garlic to a bowl. Stir to thoroughly combine.
- Top with crumbled feta before serving. Serve chilled, and enjoy!

Feta Cucumber Salad Tips
- If you prefer, you can use mozzarella or goat cheese in place of feta cheese. Both are great alternatives to feta in salad.
- Large tomatoes can be used instead of cherry tomatoes, if you like. I recommend using heirloom tomatoes and cutting them into chunks of equal size to the cucumbers.
- This recipe will make about 6 small servings or 4 larger portions. To feed a crowd easily, double the ingredients.
- Other dressings may be used instead of the balsamic vinegar dressing in this recipe. Try the sweet honey balsamic vinaigrette used in my Rocket Salad with Pear.
Salad with Feta Cheese FAQs
As with any vegetable salad, if you store cucumber feta salad for too long, it will become somewhat watery. Store it in an airtight container in the refrigerator for 1-2 days and stir before serving each time.
You do not need to peel cucumbers for salad, but you can if you prefer. Some cucumber varieties have thicker skins than others, so if you prefer them peeled, they may be peeled to put into salad.
