Mix salt, brown sugar, paprika, dried thyme, black pepper, onion powder, garlic powder, and ground cumin thoroughly in a small bowl.

Cut potatoes and add them to a large mixing bowl. Season with potato seasoning and toss until all potatoes are fully coated. Depending on the recipe, toss with olive oil in addition to the seasoning.
Cook potatoes according to your preferred potato recipe.

This seasoning can be used for all different kinds of potatoes. I personally love Yukon Gold potatoes, but it works for russet potatoes, red potatoes, small potatoes... the list goes on!
For a bit of fresh green and a nice contrast to this savory-sweet seasoning, add some freshly chopped parsley after cooking. Other fresh herbs like a bit of extra thyme or rosemary also work well.
Top your potatoes with a little grated parmesan cheese for a delicious finish to this seasoning.
You can use this potato seasoning for other veggies, too - or even sweet potatoes!
