Equipment

  • 1 grill or grill pan
  • 1 large bowl for serving salad
  • 1 small bowl for mixing dressing

Ingredients
  

  • 1 peach ripe, but still slightly firm
  • ½ Tablespoon olive oil
  • 1 handful arugula or other greens of your choice, ex. baby spinach or spring mix
  • 1 handful cherry tomatoes sliced
  • ¼ cup blueberries
  • 1 Tablespoon sliced almonds
  • ½ Tablespoon Feta cheese

Orange Vinaigrette Dressing

  • 1 Tablespoon olive oil
  • 1 Tablespoon orange juice
  • teaspoon Dijon mustard
  • ¼ teaspoon sugar

How to Grill Peaches

  • Cut peaches into wedges. Toss the slices gently with olive oil.

  • Heat grill to medium heat. Wait until the grill is hot before adding the peaches.
  • Grill for 2-3 minutes per side until each side has gentle grill marks.

  • Carefully remove the peaches and set aside.

How to Make Peach Salad

  • Place arugula at the bottom of a wide bowl.

  • Top with sliced cherry tomatoes.

  • Top with fresh blueberries.
    ¼ cup blueberries

  • Arrange grilled peach slices over top.

  • Whisk together olive oil, orange juice, Dijon mustard, and sugar to form a vinaigrette. Drizzle the dressing evenly over the salad, then feta cheese.
    ½ Tablespoon Feta cheese, 1 Tablespoon olive oil, 1 Tablespoon orange juice, ⅛ teaspoon Dijon mustard, ¼ teaspoon sugar

Notes

Tips for Grilling Peaches
  • Clean your grill grates before grilling peaches.
  • Make sure the grill is hot before adding the peaches. If not hot enough, the peaches may stick to the grill. Use medium to medium-high heat.
  • Your peaches shouldn't be too ripe. If they're too soft, they might fall apart on the grill. Use peaches that are still a little firm for best results.
  • Don't forget to toss the peaches with oil!
  • You can also grill peaches on the stove. Use a grill pan or a very hot cast iron skillet and cook for 2 minutes per side.
