Flour Bowl
Preheat oven to 400°F. Line baking sheets with parchment paper. Boil prepared potatoes in a pan with water for 20 minutes.
1
Drain and transfer the potatoes to a bowl.
Mash until smooth. While the potatoes are still warm, fold in egg yolks one at a time.
2
Fold in butter and cream. Season with salt, pepper and nutmeg. Transfer mashed potatoes to a piping bag with a star tip.
3
Starting from the center, pipe into swirled mounds. Bake for 20 minutes, rotating the sheets half-way through.
4
Once ready, remove from the oven and use a spatula to carefully remove the potatoes from the baking sheet.
5
Melt butter in a saucepan. Then add shallots and cook until softened. Stir in garlic and cook for 1 minute.
6
Add tomatoes and cook for 20-30 minutes. Stir in parsley and season with salt and pepper.
7
Spoon the sauce into the cavities of the cooked duchess potatoes. Enjoy!
