Green Bean Amandine - Christmas Vegetable Recipes

Equipment

  • 1 pot or kettle for boiling water
  • 1 bowl for an ice bath
  • 1 knife for trimming green beans

Ingredients
  

  • 7 ounces green beans
  • 4 Tablespoons butter
  • ½ cup sliced almonds
  • ½ lemon for juicing
  • ½ handful fresh dill optional
  • salt and pepper, to taste; I recommend Maldon Sea Salt Flakes, or sea salt flakes of your choice

Instructions
 

  • Wash and trim green beans, then add them to a small pan. Have a bowl of ice water ready. Add boiling water from a separate pan or kettle and allow the beans to simmer for 2 minutes.

  • Immediately drain the water after 2 minutes, and add the green beans to ice water to blanch them. This will keep the green beans crisp and bright green in color.

  • Place a frying pan over medium heat and add butter. Once melted, add sliced almonds. Toss with the butter and fry for 5 minutes until the almonds are lightly browned.

  • Squeeze lemon juice over the almonds and remove from the heat. Adding lemon juice causes the butter to simmer and reduce rapidly, which will further brown the butter and almonds, so make sure to remove the pan from the heat so they don't burn.

  • Drain green beans from ice water, then add to the pan. Toss with buttered almonds. Stir in fresh dill if desired, season to taste with salt and pepper, and serve. Enjoy!

Notes

  1. To trim green beans, arrange them so the stems are evenly lined up.
  2. Use a hand to keep them in place, then carefully slice the tips away with a sharp knife.
  3. Kitchen scissors may also be used.
Rinse them first with cold tap water to clean them.
If you're short on time, you can skip the blanching process and they will still be delicious.
