Lightly tossed in a savory blend of seasonings, these thick wedges of potatoes are fluffy on the inside and ultra-crispy on the outside!
Rinse potatoes, but do not peel them. Cut each in half lengthwise.
Take the cut potato half and cut it in half again
Now, halve the remaining quartered pieces
Soak in cold water for 10 minutes. Preheat oven to 400°F and line a baking sheet with parchment paper.
In a bowl, combine olive oil, salt, and all spices. Drain the potatoes and dry them.
Place them in the bowl with the spices, toss, and rub them with the seasoning until they are evenly covered.
Arrange on the baking sheet. Bake for 20 minutes, then turn them over. Bake for another 10-15 minutes.
Sprinkle with parsley and dip them in ketchup or any sauce of choice. Enjoy!
