Complete with an optional homemade tomato sauce, this recipe for duchess potatoes is super rich and creamy!
Set oven to 400°F. Line baking sheets with parchment. Boil potatoes in a pan with water for 20 minutes.
Drain and transfer the potatoes to a bowl. Mash until smooth. While still warm, fold in egg yolks one at a time.
Fold in butter and cream. Season with salt, pepper and nutmeg. Transfer mashed potatoes to a piping bag with a star tip.
Starting from the center, pipe into swirled mounds. Bake for 20 minutes, rotating the sheets half-way through.
Once ready, remove from the oven and use a spatula to carefully remove the potatoes from the baking sheet.
To Make the sauce: Melt butter in a pan. Then add shallots and cook until soft. Stir in garlic and cook for 1 minute.
Add tomatoes and cook for 20-30 minutes. Stir in parsley and season with salt and pepper.
Spoon the sauce into the cavities of the cooked duchess potatoes. Enjoy!
