If you like your instant pot sweet potatoes mashed, just remove the skin, mash with a fork, and they'll be perfectly soft!
Place a trivet in the bottom of the Instant Pot, then pour 1 cup of water in the bottom of the pot.
Wash the potatoes, and then stab each potato multiple times to prevent bursting while they cook.
Place the potatoes inside on the trivet. Add the lid and select Manual and High Pressure for 16 minutes.
Naturally release the pressure. This will take 10-15 minutes. Remove the lid, and use tongs to remove.
Slice open the skin or remove it entirely, and serve with your favorite toppings!
