Heat grill to medium heat. Add garlic powder, sea salt, and pepper to a bowl. Mix together to combine.
Grease a baking dish with cooking spray. Cut russet potatoes into evenly-sized cubes, then add them to the dish.
Pour oil over the potatoes. Sprinkle with the seasoning and stir to fully mix together, then add another spoonful and mix again.
Add the baking dish to the grill over medium heat. Cook for 30 minutes, stirring every 10 minutes.
Remove from the grill once fork-tender and crispy. Serve and enjoy!
