Foil Potatoes in the Oven
One of my favorite side dishes for a summer cookout or grilled family meal is my potatoes in foil. They are delicious and, best of all, easy to make in the oven or on the grill!
This recipe for foil potatoes is all about convenience. All you need to do is prep the potatoes, mix them, and wrap them in foil. The grill (or oven!) does the rest of the work, totally hassle-free.
My potatoes in foil are fantastic on their own, but be sure to check out some of my favorite ways to dress them up. This is a truly versatile side dish I hope you love making as much as I do!

Grilling Potatoes in Foil Ingredients
- Baby potatoes
- Olive oil
- Dried rosemary
- Fresh or dried thyme
- Garlic cloves
- Sea salt
- Butter
- Fresh parsley
How to Grill Potatoes in Foil
- Preheat the grill to medium heat. Chop baby potatoes into bite-sized pieces then place in a bowl and mix with oil, seasoning, whole garlic cloves, and dried rosemary.
- Transfer the potatoes to a piece of foil around 28 inches in length. Bunch the potatoes in the middle of the foil, and place sprigs of thyme or dried thyme on top and add 1 Tablespoon cubed butter. Bring the edges of the foil together and wrap.
- Grill for 40 minutes, then remove from the grill and open up the foil. Remove the thyme and add in more butter and seasoning, then return to the grill with the foil open and cook for another 15 minutes or until golden brown.
- Top with parsley (optional), and enjoy!

Oven Potatoes in Foil
- Preheat oven to 400°F. Chop baby potatoes into bite-size pieces and place in a bowl. Mix with oil, seasoning, whole garlic cloves, and dried rosemary.
- Transfer the potatoes to a piece of foil around 28 inches in length. Bunch the potatoes in the center of the foil and top with sprigs of thyme and butter.
- Bring the edges of the foil together and wrap the potatoes.
- Add potatoes to the preheated oven and roast for 40 minutes. Remove and open the foil after 40 minutes. Remove thyme sprigs, add more butter, then return to the oven with the foil open. Cook another 15 minutes or until the potatoes are golden brown.
- Serve topped with parsley (optional), and enjoy!

- Make sure to always use heavy-duty aluminum foil- it keeps everything together!
- When you are prepping your potatoes, try to cut them all to be as close to the same size as possible. This ensures even cooking so everything is done at the same time!
- Don't be afraid to check your potatoes! Every grill is a little different, and the so is the way it heats.
- If you feel your potatoes are cooking too quickly (which is where they brown without cooking through), let your grill cool off a bit, or move the foil packets further from the heat source.
- I like to use baby potatoes for this recipe, but feel free to use whichever variety of potatoes you have on hand- or check out what's in season!
Grilling Potatoes in Foil FAQs
When you cook potatoes in foil, there is no need to boil them. This is sometimes called parboiling, and while it works well for some potato recipes, potatoes in foil do not require this step. If you would like to speed up the cooking process, you could boil them first, but make sure to grill them for 20 minutes instead of 40 so they don't overcook.
How long to grill potatoes in foil: For a medium-heat grill, it will take about 40 minutes of cook time for the potatoes to be finished.
The best way to keep potatoes from sticking to aluminum foil is to toss the potatoes in oil, making sure to completely coat them. This will keep them from sticking to the top and the bottom of the foil.
When potatoes are cooked in foil, they retain their moisture and steam rather than roast or bake. This helps the potatoes cook while soaking up the flavors and seasonings wrapped in the foil with them.
Potatoes in Foil Toppings
The best thing about my grilled garlic potatoes is how versatile they are when it comes to toppings. As this recipe is written, the potatoes make a wonderful side dish to so many different kinds of main course dishes.
If you are looking for some variations, all it takes are a few additional items. Here are some of my favorite ways to dress up my grilled potatoes in foil:
- Sauteed Garlic Mushrooms (add some beef and provolone and you've got Philly Cheesesteak potatoes!).
- Salsa, cilantro, Crockpot Taco Meat, and sour cream
- Roasted Tomatoes, fresh basil, and mozzarella cheese
- Creamy homemade blue cheese dressing and smoked bacon
- Shredded chicken, pork, or smoked brisket with BBQ sauce and coleslaw

How to Store Foil Potatoes
Grilled potatoes in foil can be stored in an airtight, sealed container for up to 3 days when left in the refrigerator.
Potatoes contain quite a lot of starch. Because of this, it is not recommended to freeze potatoes because the consistency can change during the freezing process.
How to Make Potatoes in Foil Ahead of Time
Making grilled potatoes ahead can save you some time in the kitchen, especially for a barbecue, when there are plenty of other things to cook. Whenever you prep potatoes ahead, you want to keep them from browning, here's how I do it:
- Prep everything the night before by adding the potatoes to a bowl of water (this keeps the potatoes from turning brown).
- Cover them completely.
- In the morning, drain the potatoes and dry them off by patting them with a kitchen or paper towel.
- Assemble potatoes with your other prepped ingredients in the foil packets and prepare according to recipe instructions.
How to Reheat Grilled Potatoes
There are several ways to reheat grilled potatoes, and I love how delicious these potatoes can be the next day!
If you want to reheat potatoes on the grill, put them back into foil, seal, and reheat over a medium-heat grill until cooked through. About 10 minutes.
You can also reheat foil potatoes in the oven by preheating an oven to 400°F, placing the potatoes on a baking sheet (I like to coat them in just a little bit of oil or butter), then cover with foil and roast until cooked through, between 10-15 minutes.
Another easy way to reheat grilled potatoes is by using the air fryer. Simply reheat the potatoes in an air fryer until cooked through. For most air fryers, this will take between 8-10 minutes at 400°F.

Grilled Potatoes in Foil
Equipment
- Grill or oven
- Aluminum foil
Ingredients
- 1½ pounds Baby potatoes chopped into bite size pieces
- ½ Tablespoons Olive oil
- 1 Tablespoon Dried rosemary
- 3 Sprigs fresh thyme or 3 teaspoons of dried thyme
- 7 Whole garlic cloves no need to peel; or 2 tablespoons of powdered garlic
- Pinch Sea salt and pepper
- 2 Tablespoons Butter
- 4 teaspoons Fresh parsley optional
Instructions
- Preheat the grill to medium, or oven to 400°F. Cut 1.5 lbs. baby potatoes into bite sized pieces, then place in a bowl and mix with ½ Tbsp. olive oil, 1 Tbsp. dried rosemary, a pinch of sea salt and pepper, and 7 whole garlic cloves or powdered garlic.
- Transfer the potatoes to a piece of foil, around 28 inches in length. Bunch the potatoes in the middle of the foil. Place 3 sprigs of thyme or dried thyme and 1 Tbsp. cubed butter on top of the potatoes. Bring the edges of the foil together and wrap, tightly sealing all the way around. If the foil isn’t long enough to wrap properly, then double wrap with second piece of foil in the opposite direction.
- Place the foil directly onto the grill or, if roasting, place on a tray before putting in the oven. Grill or roast for 40 minutes, then remove from the grill or oven and open up the foil. Remove the thyme and add in the rest of the butter and season again, then return to the grill or oven with the foil open and cook for a further 15 minutes or until golden brown.
- Top with parsley (optional) , and enjoy!
