One of my favorite side dishes to make from scratch is potato salad. Everyone likes their potato salad a little different: with vinegar, with mayonnaise, with or without eggs. It's easy to customize homemade potato salad rather than buying it at the store!
Instant Pot Potato Salad is a simple solution to making potato salad at home and customizing it just how your family likes it. It's easy, time-saving, and the results are a creamy potato salad everyone will love! Perfect for weekdays, picnics, or the holidays, like Easter.
All you need is a few simple ingredients, Instant Pot, knife, and potato peeler. Or, if you like the skins on, leave the skins on! That's the beauty of homemade potato salad and this easy recipe.

Whether you remove the skins from your potatoes is entirely up to preference. You can boil potatoes with the skin on or off for potato salad with the only difference being texture. I peel my potatoes, but some enjoy potato salad with the skins on. If you're using small red potatoes or Yukon gold potatoes, the skins can add a nice color and texture to the dish, so leave them on if you prefer.
Vinegar adds a punch of flavor to potato salad, in addition to keeping the potatoes from drying out and helping them hold their shape.
For making potato salad, it is better to cut up your potatoes rather than leaving them whole.
Potato salad can become watery and runny if you mix your other ingredients into the potatoes before allowing them to cool. Drain and cool the potatoes immediately after cooking them, and make sure they are cooled down enough before mixing your other ingredients in.

I only recommend keeping the potato, vinegar, and water ratio the same, unless you're accustomed to making potato salad from scratch already.

How to Make Potato Salad in the Instant Pot
- Wash and dry potatoes, then peel and cut into 1 to 2-inch pieces. Add prepared potatoes to the bottom of Instant Pot with water and whole eggs. Pressure cook for 4 minutes on high, then quick release when 4 minutes is up.
- Remove the eggs and place them in an ice bath for 5 minutes. Meanwhile, drain water from the potatoes and place the pot in the refrigerator to cool.
- Wash celery and thinly slice, then cut onions into small pieces. Finally, peel the cooled eggs and cut them into small pieces, leaving one for garnish if desired. Once your potatoes are cooled down, add the celery, onion, and eggs to the pot.
- Combine mayonnaise, vinegar, salt, sugar, and pepper in a bowl and mix until creamy. Pour the dressing over top your potato mixture and mix together well.
- Garnish with fresh chives and egg slices if using. Serve chilled, and enjoy!
