I love Easter! It's one of those holidays that's fun no matter who you are. When my kids were young, Easter meant hiding their colorful, candy-filled Easter baskets around the house to let them find and make fun colorful decorations as a family; now that they're older, it's a time for connecting with the family and celebrating spring!

For a truly classic Easter menu, cook up an Easter ham and a big pot of potatoes any way you fancy, then top it all off with a bunch of great vegetable side dishes to celebrate the coming of new growth!
For meats, ham is the most commonly served meat for Easter. Vegetable sides typically consist of the last corn and potatoes saved over the winter, as well as fresh spring crops such as peas, asparagus and carrots.
The perfect choice to bring to Easter dinner is a vegetable side. Ask what's needed, and then get creative! Corn on the cob reheats well for making early, as well as scalloped potatoes and carrot soup. Or, bring a big bowl of salad, and add the dressing when it's time for dinner.

- Large skillet
Ingredients
- 4 Tablespoons Butter unsalted
- 2 lbs. Carrots peeled and sliced into thick sticks
- 6 Tablespoons Brown sugar
- 2 Tablespoons Maple syrup
- ¼ teaspoon Salt
- pinch Black pepper ground
- Fresh parsley chopped, for garnish
Instructions
- Slice your carrots lengthwise, then melt butter in a large skillet. When the butter is melted, add in the carrots, brown sugar, maple syrup, salt, and pepper. Mix well until combined and melted.4 Tablespoons Butter, 2 lbs. Carrots, 6 Tablespoons Brown sugar, 2 Tablespoons Maple syrup, ¼ teaspoon Salt, pinch Black pepper
- Let the sauce mixture cook with the carrots, maintaining a bubbling simmer and stirring occasionally to prevent sticking, until the carrots are the desired tenderness and the sauce is reduced to a thick glaze.
- Garnish with parsley if desired, and serve! Glazes thicken as they cool, so this dish is best served right away.Fresh parsley
Notes
- Preheat oven to 425°F.
- Peel and slice carrots lengthwise. Or, leave them unpeeled, but scrub to wash, then slice.
- Melt butter in the microwave, then add it to a bowl with brown sugar, maple syrup, salt, and pepper. Mix together.
- Toss the carrots in the glaze mixture to fully coat.
- Cover a baking sheet with parchment paper. Evenly spread the glazed carrots on the sheet.
- Bake for 25-30 minutes, mixing them around halfway through to make sure they are coated with the glaze on all sides. When they're ready, they will be caramelized and soft.
- Top with chopped parsley if using, serve, and enjoy!
