Black Eyed Peas Salad

Black-Eyed Peas Salad is a vibrant, fresh salad recipe you will find yourself craving over and over again. It's as simple as opening a few cans, chopping a few ingredients, and mixing it all together with the dressing!

Also known as Cowboy Caviar, this dish is perfect on its own or as a side dish for sandwiches, tacos, nachos, or just about any entree. It makes a flavorful dip or salsa served with chips, and I personally love it with beef quesadillas or as a BBQ side dish.

I guarantee if you serve this cowboy caviar salad at your next gathering, you will be asked for the recipe - and the best part is, it's just so easy!

What are Black Eyed Peas?

Black Eyed Peas aren't peas at all. They are actually a member of the legume or bean family. They are also known as goat peas or southern peas. The most common variety is known as the California Blackeye.

  • Black-eyed peas
  • Pinto beans
  • Black beans
  • Zesty Italian salad dressing
  • Celery
  • Green bell pepper
  • Red bell pepper
  • Small onion
  • Cilantro
  • Salt
  • Pepper

How to Make Black-Eyed Pea Salad

  1. Finely dice celery, green bell pepper, red bell pepper, and onion. Chop cilantro. Drain canned black-eyed peas, pinto beans, and black beans. Add these ingredients to a bowl.
  2. Gently mix, then add Zesty Italian salad dressing and salt and pepper. Mix through. Taste and add additional seasoning if desired, then serve and enjoy!

  • This Black-Eyed Pea Salad recipe is extremely versatile. Not a fan of cilantro? Skip it. Love corn? Add in extra! You can play with the ingredients as much as you like, even swapping out certain types of beans for others or making your own Italian dressing to use.
  • Letting the salad sit overnight gives it a stronger flavor. Develop the flavors even more by letting the salad rest in the refrigerator overnight after mixing.
  • Want a little extra heat? Add diced jalapeños to the mix! My family loves jalapeños in this dish.

  • 1 can Black-eyed peas
  • 1 cup Celery
  • ¼ cup Cilantro
  • 1 can Sweet Corn yellow
  • 1 Green pepper
  • 1 Red pepper
  • 1 small Onion
  • 1 can Pinto beans
  • 1 can Black Beans
  • ½ teaspoon Pepper
  • 1 teaspoon Salt
  • 1½ cup Zesty Italian Salad Dressing

    Sounds really good! I guess no need to rinse any of the beans? How long does it keep in the refrigerator? Does the dressing mostly get absorbed?

      Hi Carol! No need to rinse the beans! It should keep for 2-3 days in the refrigerator and yes, the dressing holds nicely to the salad.
