Black-Eyed Peas Salad is a vibrant, fresh salad recipe you will find yourself craving over and over again. It's as simple as opening a few cans, chopping a few ingredients, and mixing it all together with the dressing!
Also known as Cowboy Caviar, this dish is perfect on its own or as a side dish for sandwiches, tacos, nachos, or just about any entree. It makes a flavorful dip or salsa served with chips, and I personally love it with beef quesadillas or as a BBQ side dish.
I guarantee if you serve this cowboy caviar salad at your next gathering, you will be asked for the recipe - and the best part is, it's just so easy!

What are Black Eyed Peas?
Black Eyed Peas aren't peas at all. They are actually a member of the legume or bean family. They are also known as goat peas or southern peas. The most common variety is known as the California Blackeye.

Black-Eyed Pea Salad Recipes FAQs
Black-eyed peas have an earthy taste similar to white beans; they're savory and slightly nutty, with a creamy consistency. Paired with other beans, peppers, onions, seasoning and dressing in cowboy caviar salad, they add a lovely balance of earthy flavors to go with the zesty taste of the other ingredients.
Black-eyed pea salad pairs well with dishes of all kinds, but especially southern or Tex-Mex cuisine. Nachos, tacos, quesadillas, other Mexican-inspired dishes and BBQ pair well with the zesty, earthy flavors of black-eyed pea salad.

Sounds really good! I guess no need to rinse any of the beans? How long does it keep in the refrigerator? Does the dressing mostly get absorbed?
Em says
Hi Carol! No need to rinse the beans! It should keep for 2-3 days in the refrigerator and yes, the dressing holds nicely to the salad.
